摘要: 稻谷是我国重要的粮食作物,做好稻谷的储藏工作对保障国家粮食安全、减少不必要的经济损失和提高人们生活品质意义重大。影响稻谷储藏的因素有脂肪酸值、温度、稻谷含水量、储藏条件以及加工处理方式等,储藏的效果是内外因素综合作用的结果。稻谷储藏和加工中易发生陈化变质、发热霉变、生虫、沤黄、结露、爆腰等问题,本文介绍了稻谷发生这些问题时的表象及相关理论研究成果、稻谷干燥的理论依据和干燥工艺、储藏管理经验等,以期为稻谷的加工与储藏提供理论指导和参考经验。

Abstract: Rice is an important grain crop in China. To do a good job of rice storage to ensure the national food security, reduce unnecessary economic loss and improve the quality of people's life is of great significance. Influencing factors of storage quality are fatty acid value, water content, temperature, rice storage conditions and processing method. The storage effect is the result of the combined effects of internal and external factors. The storage and processing of rice are easy to deterioration. This article describles the appearce, the theory of grain drying processes, dry technology and experiences of storage management in order to provide the theoretical guidance and reference for rice processing and storage.
